My daughters and I were on the hunt for a new and yummy dish for our zucchini and yellow squash. We came across this recipe and have truly enjoyed adding it to our weekly routine.

Ingredients
2 medium zucchini, cut into ½-inch-thick rounds
2 tablespoons extra-virgin olive oil
½ teaspoon sea salt, plus more to taste
½ teaspoon freshly cracked black pepper
1 teaspoon garlic powder
½ cup grated Parmesan cheese
Preparation
Step 1
Preheat the oven to 450°F with a rack in the center position.
Step 2
In a large bowl, toss the zucchini with the olive oil, salt, pepper and garlic powder.
Step 3
Arrange on a rimmed sheet pan in a single layer, top with the Parmesan cheese and bake for 5 minutes.
Step 4
Turn the oven broiler to High. Continue to bake until the cheese is golden brown and the zucchini is tender, about 2-3 minutes.
